Healthy Recipes for the Whole Family

What you will need:

  • 2 Pounds of Small, Red-Skinned Potatoes (Quartered)
  • 3 Tablespoons of Olive Oil
  • ½ Teaspoon of Cumin Seeds
  • Kosher Salt & Ground Pepper
  • 4 Cloves of Finely Chopped Garlic
  • 2 Tablespoons of Light Brown Sugar
  • 1 Lemon
  • Pinch of Red Pepper Flakes
  • 4 Skinless & Boneless Chicken Breasts
  • 2 Tablespoons of Chopped Fresh Cilantro or Parsley

How to prepare:

First, preheat your oven to 425 degrees Fahrenheit, mix and toss the potatoes with 1 tablespoon of olive oil, cumin seeds, and add a touch of salt and pepper. Once you spread the mixture in a large baking dish, roast it for 30 minutes or until the potatoes start browning.

While you wait, heat the rest of the olive oil in a skillet over medium heat. Next, add garlic until it turns a light gold color and add the brown sugar, lemon juice, and red pepper flakes.

Now, remove the baking dish from the oven and make room for the chicken breasts surrounded by the potatoes. After you season the chicken, bake the mixture for about 20 minutes. Remove and cut the chicken. After you add cilantro or parsley and toss the entire mixture, you are ready to drizzle the juices from the pans on top and serve! Enjoy!
