Corn and Veggie Summer Salad
Fresh summer vegetables are some of the best ingredients you can use this season. If you are looking for a delicious, light meal to enjoy this summer, keep this tasty corn and summer vegetable sauté in mind.
You will need:
- ½ cup chopped green onions
- 1 tablespoon canola oil
- 1 minced clove of garlic
- 1 cup sliced fresh okra
- 1 cup chopped red bell pepper
- 1 cup fresh corn kernels
- 1 chopped and seeded jalapeno pepper
- 1 can black beans, rinsed and drained
- 1/3 cup minced fresh cilantro
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Then you will need to:
- Heat the oil in a large nonstick skillet over medium high heat.
- Add the onion and garlic to the skillet and sauté for 1 minute. Add the okra and sauté for 3 minutes.
- Reduce the heat to medium and add the bell pepper and jalapeno and cook for 5 minutes. Add the corn and cook for another 5 minutes. Stir in the beans and cook for 2 minutes.
- Stir in cilantro, sprinkle with salt and pepper, and enjoy!
